ABOUT US

Mama coco was established in 2008 by Davy, Celia and Roseanne O’Rourke. We started selling cakes next door to Billy’s Coffee at Rusty’s market in Cairns. People enjoyed our cakes and we started to see the potential for growing our small business. By the end of 2008 we were selling our cakes at Rusty’s and Tanks Markets and had started to wholesale to cafes and restaurants. We decided to take the plunge and lease a commercial kitchen and cafe at the beginning of 2009. Now Mama Coco is a cafe, wholesaler, market stall and caterer. The cafe is open Monday to Friday 7.30-3.00 serving breakfast, lunch, coffee and ofcourse Mama’s cakes.

You can taste our cakes at... Dolce and Caffe, The Edge, IndustryOne, Caffiende, Healthy Bite, Barista Sista and Tosca’s.

The unreal story...

Mama Coco started as a grass roots person to person freedom to eat movement.

It’s humble beginnings can be traced back to a smallish yet adequate plot of coastal land by the sea at the place known to the locals as Holloways. And here’s an intersting piece of trivia: Holloways’ name is derived from the local custom of yelling the daily news to neighbours, as the families lived close together (but not so close as to warrant getting up to move for a conversation so they got into the habit of hollering.

The devotees gathered around shale and clay built cooking kilns elaborately decorated with sea shells which the children would gather on their almost daily walks with Mama. The elder clansmen on alert for snapping sea dragons (we educated folk call them crocodiles) that would occasionally claim an unsuspecting child or wandering bush fowl. One of the more creative children known fondly to all as Dexy (or any number of other and often inappropriate nicknames) would scamper up the coconut trees to play ‘HEADS’ with his fellow siblings.

Not being one to waste a tasty treat he would gather berries and fruits and bake in the clay kilns late into the night to satisfy his craving for sweet tasty delights. Oddly, he had a penchant for an unusual green tea with a wafting fragrance that seemed to add character and depth to the flavour of the food whilst it cooked in the stoking coals of the kiln. Soon the hollering in the area became “Taste that!”, “Love your buns” and “How’s that for a tart!”. And thus, the legend was born.

Mama, seeing a means to trade for a new canoe soon began encouraging young Dexy to do more tree scampering and the rest is history...

Prices

All Mama Coco catering prices are inclusive of GST. These prices do not include staff, equipment hire or delivery.

Quotes

Mama Coco catering will prepare a quote for all functions as requested. Once a quote is accepted, confirmation of your booking will be forwarded via email.

Payment

Mama Coco catering accepts payment via direct deposit (electronic funds transfer), cheque, cash and major credit cards including Visa and MasterCard. Payment is required on or before the day of catering. (unless prior account arranged)

Cancellations

Cancellations made less than 24 hours prior to delivery will not be accepted and will incur the full cost of invoice.

Final Numbers

For functions over 30 guests final numbers must be received 5 days prior to the event. All other functions under 30 guests, at least 3 days notice is required.

Delivery fees are calculated according to Suburb

  • Parramatta Park, Westcourt, Whitfield, Edge Hill, Manunda, Manoora, Cairns CBD, Earlville, Kanimbla $15.00
  • Woree, Bayview Heights, Aeroglen, Freshwater, Brinsmead, Redlynch, Edmonton $25.00
  • Smithfield, Northern Beaches $35.00

Deliveries before 8.30am and after 5.30pm will incur a 10% surcharge

Staff

Mama Coco can organize professional wait staff to ensure your function is a success. We recommend :

  • 1 staff member per 10 guests for a formal seated function
  • 1 staff member per 20 guests for a cocktail function

The cost for wait staff is $40.00 per hour (minimum 3 hours)

For formal functions where a Chef is required we recommend 1 chef per 15 guests.

The cost for a Chef is $50 per hour (minimum 3 hours)

Surcharge

A 10% surcharge applies to all functions held on Sunday and 15% for functions held on a Public Holiday.

Mama Coco can arrange hire of equipment for your special occasion. Please contact us directly and we can arrange a comprehensive quote for you

Mama Coco Equipment

All Mama Coco equipment and platters must be returned within three working days following the catering delivery. Any equipment and platters not returned will be charged at the replacement cost.
